私たちの原点とその想い

私の父は、40年以上前にフランス・リヨンで修業し料理人の道を歩みます。その後、長野・戸隠の自然に囲まれた土地で「Cafeチェンバロ」を開き、ヨーロッパの文化を日本でも、と音楽会やワインを愉しむパーティなどを催し、お客様をもてなしていました。そんな父の背中を見て育った私も、20代でリヨンを訪れます。そこで出会った料理やワインに感銘を受け、父と同じ料理の世界に入ることに。

そしてフランスの食文化を愉しめる場所を作りたい、その魅力を伝えたいという思いから、ワインとチーズ、パンをテーマにした店を名古屋・八事でスタートさせました。フランスでは日常にある、ワインとチーズ、パン。発酵・熟成を経て生まれる味わいは、人の手と風土が生み出した芸術作品のようなもの。今も私達のプラトーには欠かせません。

そして、この邸宅の、このテーブルで。どんな人とどんな想いで食事をするのか。お客様がこの邸宅で食事をする姿に想いを馳せながら…パンを焼き、花を生ける日々をひとつひとつ重ねてこれからも。この邸宅と共に新たな歴史を刻んでいくことがるよう、歩みを進めてまいります。

My father trained as a chef in Lyon, France, over 40 years ago. He then opened Cafe Cembalo in the natural surroundings of Togakushi, Nagano, where he entertained guests with music concerts and wine parties in the hope of bringing European culture to Japan. I grew up watching my father's back and visited Lyon in my 20s. Impressed by the food and wine I encountered there, I decided to enter the same culinary world as my father.
I wanted to create a place where I could enjoy French food culture and convey its appeal, so I started a restaurant in Yagoto, Nagoya, with the theme of wine, cheese and bread. Wine, cheese and bread are an everyday part of life in France. The flavours produced through fermentation and maturation are like works of art created by human hands and the climate. They are still an indispensable part of our plateau.
And at this table, in this mansion. With whom and with what feelings do you dine? We will continue to bake bread and arrange flowers, one by one, while thinking of our guests dining at this mansion. We will continue to move forward with this residence so that we can carve out a new history together with it.
